Recipe: Zucchini Pasta with Cream Sauce

Pasta. It’s something we tend to think we have to avoid in order to eat healthy.

But when you make your noodles from vegetables, like zucchini (courgette), pasta becomes a great idea for a healthy meal.

This is one recipe I don’t recommend you pack ahead of time. Its flavor and texture are at their best when eaten just after it’s made. You will need to use a spiralizer for this recipe. It’s an inexpensive gadget that turns your zucchini into spaghetti-like noodles.

The good news is you can make this up very quickly. Even the cream sauce is quick and easy. As long as it is low sodium with no added sugar (preferably organic), you can even use tomato sauce, if you want to make a creamy tomato sauce. Just add some tomato sauce into your creamy cheese sauce.

Also, to increase the nutrient and enzyme content, you can eat this raw! But if you prefer it cooked, it takes just a few minutes to warm the noodles in a pan.



  • 2 TBS water or no salt vegetable broth
  • 2 large zucchini or courgettes, spiralized
  • 1 garlic glove, minced
  • Dairy-free creamy cheese sauce
  • Optional: 1 jar of tomato sauce, low sodium and no-sugar added
  • 2 tsp of pine nuts
  • 1 TBS fresh dill or basil, chopped (I suggest you use the dill if you don’t use tomato sauce. Use basil if you do add tomato).
  • Nutritional yeast, to taste
  • Black pepper and your favorite no salt seasoning to taste


To eat it cooked:

  1. Warm a pan with water or no salt vegetable broth
  2. Add in garlic and cook gently for about 1 minute, making sure it does not brown or burn
  3. Put in spiralized noodles or “zoodles”
  4. Gently turn with tongs until the zoodles start to soften
  5. Add in the pine nuts
  6. Put in the creamy cheese sauce (and a little tomato sauce if desired)
  7. Remove when everything is warm, being careful not to overcook the zoodles
  8. Top with nutritional yeast and freshly chopped dill or basil
  9. Sprinkle some black pepper and no salt seasoning to taste

To eat it raw:

  1. Put your zoodles in a bowl and stir in the garlic.
  2. Make your creamy cheese sauce, adding in tomato if you prefer that.
  3. Gently combine the zoodles and sauce.
  4. Top with nutritional yeast and freshly chopped dill or basil
  5. Sprinkle some black pepper and no salt seasoning to taste
